IIRC the only grand soul you can trap early in the game is the Uderfrykte matron so you have to convert the empty ones into black soul gems and trap people if you want filled gems. Fortunately, enemies are weak enough before filled Grands show up in loot that you can make effective weapons with Greater soul gems.

Consider converting grand soul gems into black soul gems which can be completely filled with any humanoid soul (far easier to fill). You don't have to join the Mages Guild to do.
